Braised Spareribs with Pineapple (Kalbi Jim)





A classic Korean dish gets an upgrade with sweet pineapple chunks that make the meat extra tender and extra delicious.

 
Ingredients:

650 grams pork ribs/belly, cut into serving portions
2 tbsp, soy sauce
3 cloves, garlic, crushed
1 tsp ginger, minced
2 tbsp rice wine
1 tsp cornstarch, dissolved in 1 tbsp water
1 stalk leeks, sliced
1 tsp sesame seeds, toasted (optional)
227 gms pineapple chunks

Procedure:

1. Season pork with ¼ teaspoon iodized fine salt (or ¼ tablespoon iodized rock salt). Brown in ¼ cup oil, draining excess oil.

2. Add ¼ cup water, soy sauce, garlic, ginger, rice wine and pineapple chunks including syrup. Cover and Simmer for 30 minutes or until pork is tender.

3. Add cornstarch. Simmer until thick. Stir in leeks. Top with sesame seeds.

Makes 7 servings. :)
