2 cups tightly-packed spinach
Salt and pepper
Water for boiling
4 chicken breast fillets, pounded until thin
4 slices bacon
1 cup all-purpose flour
2 tbsp olive oil
2 cloves garlic
¼ tsp nutmeg
1 tsp chili flakes
1 pack NESTLÉ ALL PURPOSE CREAM 250ml
Procedure:
1. Cook the spinach in salted boiling water for 1 minute. Refresh the leaves in iced water. Drain and then chop finely.
2. Roll chicken wrapped with bacon to form a log. Dredge each log with flour, season with salt and pepper. Shake off the excess flour.
3. Fry up the chicken fillets in olive oil until golden brown and cooked, about 1-2 minutes each side. Remove from heat and set aside to rest.
4. In the same pan, sauté garlic until fragrant. Add in nutmeg, chili flakes and NESTLÉ ALL PURPOSE CREAM. Simmer for 2 minutes and add in chopped spinach. Simmer for 1 more minute.
5. Serve saltimbocca fillets with cream sauce on top.
