Frozen Pineapple Pie





Pineapples give a refreshing twist to this no-bake pie.



Ingredients

FOR THE CRUST
1/4 cup butter
1 1/4 cup graham crackers, crushed

FOR THE FILLING
1/2 cup condensed milk, sweetened
1 can pineapple tidbits (432g)
1 cup all-purpose cream, chilled and whipped
1 can sliced pineapple (227g), grilled
Preparation

1. Pour melted butter over crushed graham and mix well.
2. Press the graham mixture into the bottom of the pie pan. Chill well.
3. In a bowl, combine condensed milk, pineapple tidbits and half of cream.
4. Pour over prepared crust. Top with remaining cream. Place in freezer.
5. Top with grilled pineapple slice just before serving.



Chicken Inasal




This popular Ilonggo dish is loved all over the nation. Dip in a mix of soy sauce, vinegar and calamansi.
Ingredients
1 kg (whole) Chicken Meat (cut into serving pieces)
1 tbsp Garlic (minced)
1 tsp Ginger (minced)
2 stalks Lemon Grass/Tanglad (pounded)
½ tsp Black Pepper
1 tbsp Sinigang Mix Powder
3 tbsp Atsuete Seeds (soaked in 3 tbsp hot water and strained)
2 pouches (115 grams each) Del Monte Pineapple Tidbits

Cooking Procedure:
  • Mix all ingredients in a bowl and let stand for at least 4 hours in refigerator.
  • Grill or pan-grill until chicken is cooked.

Makes 6 servings



Piña-Level Up Sweet N' Sour Fish






Tired of the usual fried fish? Try this sweet and tangy dish, even your little picky eaters will love this. You’ll find in your pantry everything you need to turn your simple fried fish into this family favorite.
INGREDIENTS:

1 pc (½ kg) dalagang bukid (whole fish)
1½ tsp calamansi juice
½ tsp iodized fine salt
1 tbsp all-purpose flour (or cornstarch)
1 pc (50 g) red bell pepper, sliced (for the sauce)
2 tbsp green onion strips (optional)
4 tbsp sugar (for the sauce)
½ tsp iodized fine salt (for the sauce)
1½ tbsp all-purpose flour, dissolved in ½ cup water
¼ cup ketchup or 5 tbsp Tomato Sauce (for the sauce)
1½ tbsp vinegar (for the sauce)
1 pouch (115 g) Pineapple Tidbits, drained, syrup reserved

PROCEDURE:

1. Sprinkle fish with calamansi juice and salt, then sprinkle with flour. Fry until golden brown. Set aside.

2. Sauce: Combine ingredients (except flour) with pineapple syrup. Stir. Simmer uncovered for 2 minutes. Add dissolved flour. Simmer with continuous stirring until thickened.

3. Add Pineapple Tidbits and bell pepper. Allow to Simmer.

4. Pour over fish. Top with green onions.

Makes 4 servings. :)



Piña Bistek





Bistek gets a fancy upgrade with pineapple tidbits. Great for everyday meals or special occasions
Ingredients:
¼ kg beef sirloin, sliced tapa style
1 pc (large) onion, sliced into rings
8 cloves garlic, crushed, for marinade
3 tbsp soy sauce, for marinade
1½ tsp calamansi juice, for marinade
¼ tsp black pepper, for marinade
pineapple syrup, for marinade
1 can (227 g) Pineapple Tidbits

Procedure:

1. Marinate beef for 1 hour. Drain and reserve Marinade.

2. Fry beef in ¼ cup oil until light brown. Set aside. Retain 2 tablespoons oil in pan.

3. In the same pan, sauté onion until almost tender. Add Marinade. Simmer for 2 minutes. Add fried beef and Pineapple Tidbits. Simmer once.

Makes 3-4 servings. :)



Chicken Adobo with Pineapple




Give chicken adobo a slightly sweet upgrade with pineapple tidbits.
INGREDIENTS:
400 g chicken, cut into serving portions
1 pouch (115 g) DEL MONTE Pineapple Tidbits, drained (reserve syrup)
6 cloves garlic, crushed and fried to brown

MARINADE:

3 cloves garlic, crushed
1-½ tbsp DEL MONTE Red Cane Vinegar
1 tbsp soy sauce
¼ tsp peppercorn, crushed
Reserved pineapple syrup

PROCEDURE:

1. Marinate chicken for 30 minutes. Drain and reserve marinade.
2. Fry chicken in oil until golden brown.
3. Combine chicken with marinade then simmer until chicken is tender. Season with sugar to taste. Add DEL MONTE Pineapple Tidbits. Top with fried garlic.





Makes 4 servings. :)
